Red Bourbon – Process
This Red Bourbon varietal is sourced from farmers near Granja Paraiso 92, owned by Wilton Benitez. Wilton collects freshly harvested coffee cherries from these local farmers and transports them to his processing facility near the town of Piendamo. There, he ferments the coffee for 36 hours, after which it is depulped, washed, and dried.

Cauca – Colombia
This coffee comes from the region of Cauca in the south of Colombia. Unlike the mountainous terrains typical of other Colombian coffee-growing areas, Cauca is relatively flat, which contributes to more consistent growing conditions. This stability allows for uniformity in coffee cherry ripening, leading to a distinct flavour profile that is well-balanced and rich.
The region is renowned for its fertile soil and favourable climate, which are ideal for cultivating the unique varieties of coffee that flourish here. These factors combine to make Cauca a significant contributor to Colombia’s reputation as a world-class coffee producer.
